Peruvian cuisine is one of the most recognized and valued in the world, for its diversity, flavor, creativity and history. In the jungle, dishes based on wild animal meat stand out, such as picuro, majaz, sajino, paiche and sachavaca, such as juane, tacacho, inchicapi, patarashca, timbuche, cecina , chorizo, chonta, aguaje, camu camu and masato.

In Lima, the capital, dishes that are the result of the fusion of regional cuisines and foreign cuisines stand out, such as lomo saltado, grilled chicken, chaufa rice, salted noodles, chicken chili, rice with chicken, rice pudding, suspiro a la limeña and alfajor.

Peruvian cuisine has managed to position itself as one of the best in the world, thanks to the work of its chefs, who have known how to rescue, innovate and disseminate their recipes, as well as the recognition of its diners, who have known how to appreciate and enjoy its flavors. In 2023, Peruvian cuisine was recognized as “Cultural Heritage of the Americas for the World” by the Organization of American States and UNESCO recognized ceviche as an expression of traditional Peruvian cuisine and intangible cultural heritage of humanity. In addition, the Taste Atlas portal published the update of its list of the 100 best cuisines in the world and Peruvian food managed to be placed in the Top 103.
